Orange Marmalade is More Than Just a Spread for Toast!
Odds are if you have a kitchen garden where you grow your own citrus fruit; it is probably because you love cooking with your fresh picked crops of tangy lemons, juicy oranges and zesty limes!
One of the best ways to use all of the citrus fruits you grow is to make a quick and tangy batch of orange marmalade. This sweet creation can be made either with just oranges or with a combination of oranges and lemons, or depending on your crops, even limes and grapefruits! Once you have found your perfect recipe for orange marmalade, you’ll find it is extremely versatile as both a condiment and a great addition to many sweet and sticky sauces for chicken, pork and even rice! Keep your crops of fruit growing strong and you’ll have fresh orange marmalade for all your cooking needs.
Here is a recipe for sticky orange chicken and rice that makes a quick and nutritious family supper.
4 chicken breasts
1 orange
Small can pineapple chunks
½ cup orange marmalade
3 Tbsp honey
1 tsp. Grated ginger
Cut chicken into bite sized pieces and brown in oil until evenly browned.
Season with salt and pepper to taste. Remove from pan. Peel and chop whole orange and combine with the remaining ingredients in the same pan. Once the mixture is well blended, return chicken to the pan and simmer until chicken is done, about 15 minutes. Serve over hot rice.
If you find you don’t have time to put up jars of marmalade, here is a quick way to make a batch that you can use for toast or for cooking.
1 large orange
1 cup white sugar
Cut up orange and remove seeds. Pulse orange and sugar in food processor until well blended.
Place mixture in large glass container and microwave for 2 minutes. Stir. Microwave for an additional three minutes, stirring after each minute of cooking time. When mixture is thick, let cool and place in fridge covered until needed.
